    I made a simple rub and followed Ishi's instructions, except I pulled 10 mins early at the end because I was scared it'd get past medium. After resting it wasn't to temp so popped it back in for that 10 mins and it's perfect. Just the right size for 3 glutinous people.
    My old man joined us with his usual room temp Hamms to wash it down.

    Here is some Squirrel Agnolotti I made today. It was a little bit of a process because I made my own pasta but I suppose you could buy pre-made sheets of pasta. I found this recipe on Hank Shaw's website. He has some great, wild game recipes.....you should check them out. Here is a link to the site....this recipe is on there...

    Bacon Wrapped Water Chestnuts

    This is a family favorite and would be a great appetizer for the Big Game in a couple weeks or any occasion!
    Very simple to made and the smell while cooking is wonderful. Here’s the ingredients but for a large group use two cans of water chestnuts.

    Open the cans and drain the liquid. Cut the bacon with a scissors long enough to wrap the chestnut and secure with a toothpick.

    Place tin foil to cover the bottom of the glass Pyrex to make clean up easier. If using two cans a larger dish will be needed.

    Make the sauce with one cup sugar with 1/2 cup ketchup and mix well.

    Bake in a preheated oven at 400 degrees for 20-25 minuets then drain the grease the add mixture to cover the whole dish then cook another 20-25 minuets.

    Give them a try your guests will enjoy these pieces of heavenly bliss. Enjoy the game.

    Looking for suggestions.
    In a couple weeks the Mrs and I will be attending a event in the beautiful river town of Dubuque. Looking for a good burger joint that is a local establishment and not a chain restaurant. One place I found on the web is Lot One Grill? So IW members from this area I would like info about this place or others please post or message . Thanks

    Ishi,

    I grew up in Dubuque although I haven't lived there since I left for college and my parents have since moved I'll give you the best I can remember.

    Bar Grub

    -Dubuque Mining Co. (crazy good long island ice teas)
    -Shot Tower (more of a family downtown pizza and sandwiches)
    -Copper Kettle (up on the north end and a little trendy in a neighborhood setting)
    -1st & Main (downtown around the bars on main st.)

    There are still some old time super clubs in the area if that interest you like Timmerman's and The Moracco.

    I wouldn't be afraid of any of the above and they are all local non-chain places.

    Lot one is ok but nothing special. People like shot tower for pizza but no burgers I don't think. Paul's tavern is kind of known for burgers but it's just a bar. Mining company in the mall has good drinks and ok food. Good luck!

    Give 7 hills brewery downtown a try. Local brews and their burgers are made from beef briscuit. My new favorite place.

    Google maps says 27 miles. That might have to be a Sunday brunch. Thanks for all the suggestions everyone very much appreciated.

    First cook this year it was a last minute deal. The chicken was dry rubbed with 1 part baking soda and three parts kosher salt and set in the fridge for 24 hours to dry the meat. The birds where roasted @ 325 degrees till the hit 170 IT.

    I’m ready to pull the trigger on a new RecTec pellet grill as its time for a upgrade WiFi and the latest greats stuff. Lots of stuff planned this year to cook so join in and show your stuff.

    1/2" steaks. Marinate in Italian dressing overnight and slap on the grill. Little cajun seasoning if you like.

    We took a couple birds last yr and chunked like boneless wings, bought some different sauces from bww and cooked in fish fryer, fed the archery club on a work day! Went over very well!
