Reversed Seared Prime Rib

    I decided this cooking schedule needs its own thread for ease of access. We didn’t do our normal Christmas PR dinner but postponed it for a couple birthdays that end with a zero.
    I wanted to do a PR on the pellet grill and with some help found a good one.

    Set the Roast on the counter for 2 hours at room temperature before cooking.
    Have the grill preheated at 225 degrees.

    Cook the roast till 120 IT is reached. Allow 3- 3 1/2 hours for this step. This one was 11 lbs and took 3 hours.
    When the PR reaches 120 pull the roast and place on the counter and crank up the grill to searing temps.
    Allow the roast to rest for 30 minutes uncovered. During that time the IT will raise 10 degrees to 130 which is what you want.

    After the 30 minute rest sear the PR for a few minutes on each side till it reaches 135 degrees IT. This step is quick so don’t over cook and ruin dinner

    Here I’m searing the ends. (disclaimer) Skip this step unless some of your guests likes well done PR. This step will only affect the end pieces.

    Once 135 degrees is reached pull the roast and start cutting right away and serve to your guests.

    This is a great way to prepare Prime Rib with a mild smoke flavor and a little crunch from the searing!
