Clearing some acreage.

I'm getting ready to clear off a 2 or 3 acre portion of land to convert it to food plots. Timing wise I'm hoping to have it cleared by Jan 1. I want to go with clover, should I be frost seeding in February? I've read a bunch about how fall seeding is better than spring seeding. What other options do I have, or should I just go with a spring seeding and deal with the weeds?
