Creating the perfect bedding area

I've been wanting to create a bedding area on roughly 2 acres of our farm using all natives. Thinking plum, cedars, hazelnut, widely spaced, with nwsg in between. Any ideas on the process? Thinking about getting shrubs established, then hand sowing grass. Or the exact opposite. Any suggestions? Persimmons? Crabapple? Cockspur Hawthorne? Located in central il.

A great bedding area is shrubs mixed in sparsely with NWSG. Better fence the shrubs off, or they will get browsed to death.
