I wonder how good it would be stuffed with cream cheese and garlic, wrapped in bacon and slow smoked??
 
Would your cooking directions be any different if it was a pork loin?

Only difference is I would make sure the center of the pork was up to temperature With a thermometer. Maybe cook it longer on 350 instead of shorter and 400

PFA man!!!! Pretty freakin amazing! One of the best I did a while ago was stuffed with garlic and thyme, only I just poked holes all over it and stuffed into the holes. The garlic takes a lot of any gamey flavor out! Been thinking about smoking a couple in my freezer. May have to do this to it as well.


If doing the roll, I might add to tie the ends of the roast or wrap bacon around the ends to keep the cheese from coming out the ends.

I smoke whole loins at 220-250 for about 3.5 hours (I think). In the oven I'd go with the 350. Guessing it would be about 1 -1.5 hours. I have done this roll method with the Hormel pork loin filets (basically a whole loin quartered lengthwise), and smoked them for about 2 hours. The whole loin will result in a larger roll than the loin filets.
 
I pretty much fallowed your recipient to a t. I'm just not a fan off onions so I left those out.
It was real tender. My wife even liked more than I did I think!?
 
BDAHMS-What is your recipe for garlic potatoes? I know you can buy them instant in a pouch-Home made would be better.
 
I take about 3 sections of a fresh Garlic clove- put in the oven on a cookie sheet on 400 deg for about 10 - 15 min or until the garlic becomes the consistency of butter- I squeeze the soft garlic into melted butter and 1 1/2 cups of milk and add to my cooked potatoes and then mash. Add more garlic/ salt to taste. I usually use red Russ potatoes and leave the peel on.
 
I'm just getting ready to put this in the oven! I used some cracked peppercorn bacon! Got the mashed taters and green beans with bacon also cooking!
